I've been craving homemade chicken noodle soup for the last two weeks. Don't ask me why...it's 94 degrees outside and yet I want hot soup and rolls? Crazy? Quite possibly. But I went ahead and started making it anyway. On went the chicken and made my house smell divine. By the time hubby got home I was making the homemade noodles. And that my friends is what I'm going to share with you today. Homemade noodles are about as close to heaven as you can get. (well except for chocolate)
Homemade Noodles
Step 2: Add the water to the crumbs slowly and stir until a ball is formed and all the crumbs are used up in the dough. Use the extra 2tsp of water if you need more, adding slowly until the dough is firm and elastic and shows no more crumbs. Set aside and let it rest for 10 minutes.
Step 3:
Roll the dough out on a floured surface to about 1/4'' thick. (remember that the noodles puff up to about three times their size from the raw dough in boiling water, so adjust your rolling thickness accordingly) I had to break the dough into two parts and roll out each separately. But do whatever you like best.
Also a helpful tip. I was using a huge cutting board underneath my dough and it kept slipping around. Take a couple paper towels and moisten them a little and flatten out under your rolling surface. Keeps the board from moving and lets you roll till your heart's content. (Also is great when chopping veggies etc)
They were looking good at this point and I wanted to nibble!
Serve your fresh homemade noodle soup with some bread or rolls and enjoy!

Cut your noodles to your desired shape, width, length. I used a pizza cutter to do this, was easy and fun!

Lay your noodles out on a flat surface and let them dry about three to four hours. (I dried mine just under three and it could have used another hour)

After your noodles are dried, add them slowly to the pot of boiling water. (In this case a pot of chicken and carrots I'd been cooking all day as the base of my soup)
Bring to a rapid boil and cook 20-25 minutes to taste of firmness. (Mine cooked just under 20 minutes and could have used a couple more) Your noodles will puff up about three times their original size, so make sure you have enough water to cover them in the pot.
Serve your fresh homemade noodle soup with some bread or rolls and enjoy!
And that's it. It's really easy to make, just takes some time. And remember how I told you I had to divide the dough in half? Well I just put the rest of the dried noodles in a ziplock and stuck them in the freezer. They freeze beautifully and you can have noodles again anytime without having to start from scratch!
