No Bake PB Cookie

Quilting blog. New recipe. Confusion? Yep?! Good! Mission accomplished!

We have a sweet tooth around here. Mostly we try to ignore it, but sometimes it just creeps up and demands to be satisfied...With the car doing it's best impression of a paper weight (really you can stop now...) limiting us from going to the store to purchase pre-made goodness, and the weather being so freaking hot (can we say "Enough"), this made our options very small. Therefore, I whipped out some no bake treats and saved the day!

I'm sure you remember that my husband is a peanut butter whore, addict, lover so we needed to add that in somewhere to our treat. And viola, this recipe was born. It's a combination of a couple different ones I've had around for a while, and they turned out awesome!

No Bake Peanut Butter Cookies
  • 2 cups sugar
  • 1 stick butter
  • 1/2 cup milk
  • 1 tbsp vanilla
  • 1 tsp salt
  • 2-4 tbps cocoa powder (how chocolatey do you want it?)
  • 3 1/2 cups oats
  • 3/4 cup peanut butter
The Process!
Combine sugar, butter, milk, vanilla and salt in a medium size saucepan. Bring to a boil, and cook for two minutes. Stir it occasionally to keep it from sticking. It should look something like this:

Remove from heat and add in the oats:

And Peanut Butter:


And stir to combine until smooth.


It should be smooth and starting to stick together as the peanut butter is cooling down. If it's still too liquid (use your best judgement) add in a handful of oats at a time until it thickens up.

Pour it into a greased cake pan and press flat.

(you can also drop this by spoonfuls onto wax paper and let them cool. Either way works!)

Stick them in the fridge to let cool for about a half an hour. Take out, cut up and enjoy!

Makes about three dozen, or if you want huge bars, it makes as many as you cut! :-) From start to finish maybe 10 minutes! So easy and so tasty!
