In celebration of fall, I decided to make this new twist on an old recipe. In my house growing up we'd make no bake cookies often. You know the deal, oats, chocolate, (sometimes peanut butter) scoop them out on a tray and let them cool?
Well I decided I wanted a pumpkin version so off I went to the kitchen. These turned out really well and I can honestly say they didn't last too long at my house...Check out the recipe below and give them a try for yourself!
No Bake Pumpkin Cookies
- 3/4 cup oats
- 1/2 cup flour
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1/4 cup sugar
- 1/4 tsp cinnamon (I threw in a dash of pumpkin pie seasoning as well)
- 1/2 cup chocolate chips (optional)
- 1/3 cup canned pumpkin
- 2tbsp milk
- 1/2 tbsp vanilla
Mix all ingredients together in a bowl, and scoop out onto trays lined with wax paper. Let them set up in the fridge and enjoy!
Easy peasy, and tasty!
