Peanut Butter Cheesecake (No bake style!)

It's hot! Have you noticed!?! Here in Utah we're in the 100's with no sight of rain on the horizon...and our little home is non-air conditioned. So what choice do you have when it comes to dessert? No bake of course! And when you do no bake, the only thing that comes to mind is...

CHEESECAKE

So tonight after dinner (and sitting in front of a fan complaining Scarlet O'Hara style for about an hour afterwards) we decided we needed something tasty to ward off the heat...naturally...And since hubby is such a peanut butter whore lover I decided to whip this up.

No Bake Peanut Butter Cheesecake (w/chocolate graham cracker crust)


You will need:

1 (8oz) pkg cream cheese
1 regular size tub cool whip
1/3 cup sugar
1 tbsp vanilla
1 tbsp lemon juice
1/4 cup peanut butter
1 1/4 cup graham cracker crumbs
1/3 cup cocoa
1/4 cup butter
2 tbsp sugar (for crust)
  • Combine cream cheese, cool whip, vanilla, lemon juice and sugar in a medium bowl. Blend with electric mixer until smooth. (about two minutes on medium) Add peanut butter, combine again until just mixed.
  • In a separate bowl, combine graham cracker crumbs, sugar and cocoa in small bowl. Stir softly to combine. Melt butter in microwave, add to graham cracker mixture, stir to moisten.
  • Pat the crumbs into a 9'' pie plate and pack down firmly to make the crust. (you can use a fork, or be super cool like me and use your hands!)
  • Spoon your cream cheese mixture into the pie plate, use a spatula to smooth.
  • Refrigerate for at least two hours.
  • Duct tape everyone's hands to their pockets to keep from absconding with said pie until it's done
  • And that's it, slice and enjoy!
